Morning Snack

This week's recipe comes a little later on in the week but it sure will give you a morning pick-me-up. 


Granola sometimes isn't the healthiest option but if you make your own you know exactly goes into it. And you can add as many things as you would like!


First turn the oven to 375 degrees.


Then assemble your ingredients (these are approx. add as much or as little as you like):


2 Tbsp of Coconut Oil
3 Tbsp of Maple Syrup
2 Tbsp of Honey (plus a little more for drizzling) 


3 Cups of steel cut oats
2 Tsp of cinnamon 
1 Cup of unsweetened coconut flakes
3/4 Cup of slivered almonds
1 Tbsp of chia seeds
1.5 Tbsp of graded ginger
Sprinkle of salt
2/3 Cup of dried cherries




First melt coconut oil, maple syrup and honey together in the microwave for 1 minute.

Combine all ingredients(except cherries)in a bowl (including melted liquids). 

Spread out raw granola on a cookie sheet. The more spread out it is the better. 

Place in the oven. 

Check in on it in 7-10 minutes. Move it around so the outer browned parts are mixed together.

Continue to check in on it and mix until granola is golden brown.

  

Remove from oven add dried cherries. Wait for about 5 minutes then drizzle honey over the granola (this helps it stick together in clusters). Let cool before placing in a plastic bag or container.

My favorite combo is when it is paired with ricotta for a delicious snack or breakfast.
