EASY SPANAKOPITA PIE


Did I ever tell you that I was Greek? I like to blame that for my love of carbs and all things sugary (oh and the lovely dark circles under my eyes)

I wanted to healthy up this traditional recipe by adding kale and reducing the amount of phyllo. I made a few modifications to Ina Garten's classic recipe.


I added raisins because I love the classic combo of sweet and salty.

 Instead of making individual pies, I brushed butter in the bottom of a 8x8in dish and put three layers of phyllo letting the edges hang over. Then put in the filling. Layer on top three more layers and brush with butter. Roll together the edges.

 Look at that browned goodness.
