STRAWBERRY BLACKBERRY MINI-PIES


Maybe you have seen all of my berry Instagram posts. When berries arrive in stores, I go crazy. They signal summer to me. I find ways to incorporate them into all of my dishes. These mini-pies are so easy. The idea actually came to me after I had a sweet craving one night. Why not make pies a little easier on yourself? I haven't personally tackled making my own dough. Im totally fine using prepared dough ;-)

Here is how to make these cute little berry mini-pies. 



Makes 4-6 depending on your container size. 

2 Packs of Strawberries cut up in small slices (about 4 cups)
1 Pack of Blackberries (about 1 cup)
1/2 Cup of sugar (depending on desired sweetness) 
2 Tablespoon of cornstarch
1 package of prepared pie dough 

1. Assemble your berries. Pretty aren't they? Turn your oven to 425 degrees.

2. Cut up strawberries.


 3. Add sugar to berries.

4. Add cornstarch. 

5. Mix together.

6. Put berries in a pan over medium heat until reduced and syrupy.

 7. Confession time. I didn't put enough berries in my container the first round. That's why it's important to cook down the fruit before putting in the ramekins. Continuing on…pour your fruit into small ramekins so they are full to nearly the top. Then stretch dough over the top of the ramekins and cut off the excess dough. I cut a decorative heart in the top but feel free to leave it decoration-less. Sprinkle sugar on the dough.

 8. Pop in the oven for about 10-15 minutes until filling is bubbling and crust is golden.

9. Look at that yummy goodness.

 10. Let it rest for about 5 mins. And enjoy.
