The ingredients in this recipe are deceptively simple. Just your average potatoes, onions and eggs but add in a sharp cheddar and smoked salmon and you've got yourself an incredibly comforting dish. The tastes remind me of a French dish.
I created this recipe because I was having a friend over for lunch and wanted to serve something substantial yet still ladylike. My mind went directly to quiche because it seems fancy and looks great on a table (one of the most important things of course). I didn't follow a recipe but modeled the potato idea after one I had seen on Pinterest. It turned out delicious and I had to share.
Let's get started…
1/2 cup milk
1/2 Onion cut into chunks
2-3oz Smoked salmon
1/2 cup sharp cheddar cut into chunks
Salt and pepper
Heat oven to 375 degrees.
Step No. 1
Peel the potatoes and cut thin, uniform slices. If you have a mandolin, that would be ideal (I don't but its on my wish list)
Step No. 2
Layer the potato slices in the bottom of a quiche pan. Drizzle with olive oil. Put in oven.

Crack eggs into a bowl. Whisk together with milk.
Step No. 4
Slice onion into large chunks and sauté until translucent.
Step No. 5
Take potatoes out of oven when cooked through and slightly browned on the edges.

Mix sautéed onions and cheese into egg mixture. Pour over potatoes.

Cut smoked salmon into strips and arrange on top of quiche. Add a pinch of salt and pepper.
Step No. 8
Place in oven for about 20-30 minutes. Until set in the middle and golden on the sides.
The perfect colorful flowers and arugula salad to accompany the quiche. I also served capers with it. Enjoy with friends.
