A few of you asked me to post a salad that I featured on Instagram. Ask and you shall receive. This salad combines all of the best flavors of summer in a southwest-inspired salad. It makes a great side or add chicken for a complete meal.
2-3 ears of corn, cooked and sliced from the cobb
1 1/2 cups of chopped tomato (I love mini heirlooms because they are colorful)
3/4 cup of black beans, rinsed
2 Tbsp of olive oil
1 1/2 Tbsp of honey
Salt and pepper
Goat cheese (optional)
Step No. 1
Assemble avocado, beans, tomatoes and corn in a mixing bowl.
Step No. 2
Mix olive oil, honey and juice of one lime. Add salt and pepper to taste. I like to use a jar with a lid so I can really mix it up.
Step No. 4
Pour dressing over ingredients. Toss with a spoon.
Step No. 5
Plate salad and garnish with goat cheese (optional).
Delicious! The perfect dish to bring to a dinner party.
