Perhaps you too have seen those pink onions popping up on everything. From burgers to salads to BBQ, pickled onions add the perfect amount of tang.
The best part, other than the flavor of course, is how easy they are to make. Many recipes call for apple cider vinegar mixed with sugar. I like to use seasoned rice wine vinegar because the sugar is already in it. Mix up a batch and serve it all week long.
Step No. 1
Peel a red onion and slice in half. Slice the onion in medium-thin pieces. Place in glass jar.
Step No. 2
Pour rice wine vinegar over onions until covered. Add in peppercorns if you want.
Step No. 3
Shake container to ensure onions are coated.
Step No. 4
Place in refrigerator. These are best after sitting overnight but they will be ready in about an hour. Look at that pretty pink color that they turn. It's like magic.
