YES YOU CAN MAKE: APRICOT PISTACHIO SQUARES


I don't whether it was the newly-aquired courage from my cooking class or the beautiful sunny day but Saturday was the day that I decided to conquer my favorite french pastry, the apricot pistachio tart. I have wonderful memories of pulling a dense slice of tart out from a crinkly paper bag and just sitting on a stoop in Paris enjoying the incredible flavors. Real pistachio flavor is just incredible and so unique. This tart marries those special flavors with the juiciness of peaches (or apricots) with a buttery shortbread crust. Mmmmโ€ฆheaven.

It was so much easier than I thought partially due to the fact that it was not, in fact, a tart but modified into bars. Also, the recipe is from Smitten Kitchen so you can't really go wrong there. Whatever it was, there was magic in my kitchen on Saturday and something amazing emerged from the oven.

Since I followed the recipe and didn't make any major tweaks (the only one was to sub canned peaches for apricots because of the season) I'm not going to list the steps below. Just follow the wonderful instructions on the Smitten Kitchen site. But do enjoy the lovely pictures...
