YES YOU CAN MAKE: TORTELLINI MINESTRONE SOUP


Today's recipe is full of veggies and oh-so-simple. I made it for a friend that recently had a baby. It was the perfect thing to bring over because it is warm and comforting while still being healthy. It is pretty easy because you literally just throw (ok maybe place) things into a pot and cook.

Ingredients

3 Carrots peeled and sliced
15 Spears of asparagus sliced
Pinch of salt and pepper
2 Cloves of garlic minced
1 Cup of white beans
1 Cup of diced onion
1 Can of crushed tomatoes
3 Cups of chicken or veggie stock
1 Cup of spinach
1/2 Cup of frozen peas
1 Package of tortellini

Step No. 1

Put carrots, asparagus, salt, pepper, garlic, beans, onion, tomatoes and stock in a large stockpot.




Step No. 2

Put stockpot on medium heat for about 30 minutes until vegetables are cooked through.



Step No. 3

Add tortellini, spinach and peas to soup after about 30 minutes.


Step No. 4

Serve with a hearty sprinkle of parmesan. If you have extra, save in the freezer.
