YES YOU CAN MAKE: FARRO SALAD WITH ARGULA AND GOAT CHEESE

Quick. A friend invites you over for dinner and you don't want to show up empty-handed. This recipe is super easy to throw together in 10 minutes or less. While the farro cooks, you can assemble the salad and the dressing. Then pop the farro in the freezer to cool down quickly and mix together your ingredients. The other great thing is the most of these ingredients are in your cupboard--feel free to mix up the types of dried fruit and nuts.

So lets get started...

Ingredients

Salad 

3/4 cup cooked farro

1/4 cup dried cranberries

1/4 cup goat cheese

1/4 cup chopped hazelnuts

Dressing

2 Tbsp Green Onions chopped

2 Tbsp Olive oil

Juice of one lemon

Salt and pepper to taste

Step No. 1

Assemble salad ingredients in bowl. Whisk together dressing and let marinate.

Step No. 2

Pour dressing over salad ingredients.

Step No. 3

Stir together salad.

Step No. 4

Serve room temperature.
