WINTER GOAT CHEESE CHEESECAKES
If I had to name my favorite cheese ever, it would be goat cheese each and every time. How can you go wrong with such a flavorful, versatile cheese. I throw it in everything from salads to scrambled eggs--the list just continues on. The only thing I hadn't tried it in was dessert...until now.
The lovely folks over at Montchevre sent me their ENTIRE collection of goat cheeses. I mean dream Christmas present, right?! Right. So now I have a lifetime supply (ok, until March) of my favorite cheese. I was so excited to make it into something wintery and sweet. A few notes...
I used this recipe as a base. Then added this crust. With these spiced pepitas. Add some pomegranate seeds and voila, you are done. One more note...I tried to be all clever and use cookie rings instead of springform pans. Just splurge and buy a 8" one for $12. It will be worth it. Promise.
