Living in California I feel pretty darn lucky to have fresh veggies and fruits close by in my farmers markets and in the local grocery stores. My fresh produce doesn't have to travel far to make it into my fridge. But there are a lot of people around the US (30 Million in fact!) that don't have the same access to fresh veggies and fruits. First off, I've never really fallen for those weird veggie substitutes. Despite what they may say, those zoodles aren't fooling anyone that they are pasta. They are delicious in their own right but they are not, I repeat, ARE NOT pasta.
So when I heard of this cauliflower crust pizza recipe circling around the internet I was very suspicious. I mean how could cauliflower substitute for delicious bready, pizza crust? Well folks I stand corrected because this wonder of mashed cauliflower and cheese isn't noticeably a vegetable.
For those that are gluten-free or just need one more serving of vegetables in your life (hint, we all do) then this is the perfect easy meal for you. I followed this recipe and it turned out pretty darn great. For crispier pizza I think I might spread the cauliflower in a thinner layer.
