HEALTHY SPAGHETTI AND MEATBALLS
So that health kick I'm going through keeps on kicking on. I have really been using Kelly's book that I talked about a few posts ago religiously for recipie and advice. Honestly the only thing I've had a hard time with has been meals out with friends where I revert back to the way it was (aka dairy and carbs plus a little alcohol) I'm still trying to find a balance that will be sustainable from here on out so stay tuned for that.
In the meantime, I am looking to creative solutions that make me feel full and as satisfied as their less-healthy cousins. I have been loving zoodles with meatballs as a fulling meal that is perfect for those carb cravings. I will say that no matter how you slice your zucchini it's not going to taste like pasta so just give that up right now. BUT you will love how you can eat a whole zucchini for dinner with meatballs. I use the Vremi spiralizer and it worked great. It's totally affordable and even has two sizes for different types of zoodles.
My meatball recipe is roughly adapted from Kelly's and I put the details below. It turned out great and I have enough for a few meals this week!
Here is her recipe. The changes I made were I subbed turkey for beef, I added dill (because I had it in the fridge, I used a half of an onion instead of powder, I added an extra clove of garlic and that's about it. They turned out amazing and were perfect for a nice Sunday night dinner that I could eat all week.
