YES YOU CAN MAKE: COCONUT SHRIMP LETTUCE WRAPS
Guys, I can't believe it, I'm still on the healthy train and its week 4! I have been loving trying to get creative with recipes, especially fun summertime ones that are super easy to throw together. Today I am showing you how to make coconut shrimp wraps that will only taste decadent.
To make the coconut shrimp all you have to do is put coconut oil in a pan (I used about a tablespoon) to heat up. Then pat your shrimp dry (I cooked about a half a pound) and sprinkle to coat with unsweetened coconut. Then you put the shrimp in the hot oil until they turn pink and the coconut is nice and toasted.
I put these shrimp over butter lettuce cups with jicama, pico de gallo, avocado, cilantro and crema. The crema is made using mayonnaise, lime juice and Cholula. These would make a great appetizer too!
