EASY SUPER FOOD BOWL
So here is the thing I've learned about healthy food, it's simple. The more complicated and far from its natural state, more than likely the more unhealthy it is. When you eat simple, whole foods it is easy to stay healthy.
Take this bowl for example. It's just cauliflower, an egg, sweet potato, spinach, mushrooms and onion. The most complicated part is the store-bought hummus which is made out of chickpeas, tahini, salt and lemon.
This has become one of my go-to ways to stay healthy without spending too much time making my food. If I prep on the weekends, I can just throw together these bowls after working out. I've never really been into food prep but it makes pulling together a meal like this really easy. Just store little tupperwares of hard boiled eggs, roasted veggies, sauteed mushrooms etc and the bowl comes together in minutes. You can also alternate what you put in the bowl. For example swap out roasted Brussels sprouts for spinach or add on pickled onions. This makes a great lunch to throw together for work too. I add in hummus for a little extra protein and flavor but any other dressings or even balsamic and olive oil work.
